Sports-Bar Buffalo Cauliflower Bites
Crispy roasted cauliflower tossed in tangy buffalo sauce and served with a cool blue cheese or ranch dip.
Gear: Air fryer or rimmed baking sheet
The restaurant secret
Buffalo wings are a sports-bar staple, and buffalo cauliflower has become a popular meat-free alternative on menus across the country. A light batter roasted at high heat gives crispy edges that hold the sauce well.
How to make it
- Heat the oven to 450°F and line a baking sheet with parchment, or preheat the air fryer to 400°F.
- Whisk the flour, milk and seasonings into a smooth batter. Toss the cauliflower in the batter until coated, letting excess drip off.
- Oven: spread on the baking sheet, spray with oil and bake for 20 minutes, flipping halfway. Air fryer: cook in batches for 12–15 minutes, shaking halfway.
- Whisk the hot sauce and melted butter. Toss the cauliflower in the sauce, then return to the oven for 5 minutes (or the air fryer for 3) to set the glaze.
- Serve right away with celery, carrots and dip.
Technique tip
Saucing and then briefly returning the cauliflower to the heat 'sets' the glaze so it clings rather than pooling on the plate — the same trick sports bars use for wings.
Swaps & options
- Use a gluten-free flour blend for a gluten-free version.
- Swap buffalo sauce for barbecue or honey-garlic.
Serve it with
- Serve alongside sheet-pan pizza for a game-day spread.
- Best eaten fresh; the coating softens as it sits.
